This mini key lime pie recipe is one of the easiest pies you'll ever make! It only takes three ingredients to make the filling, it bakes in the oven for 20 minutes, and then just needs some time to set! If you love all things sweet, sour, and tangy, this is the pie recipe for you!
Mini Key Lime Pie:
This mini key lime pie comes together with sweetened condensed milk, key lime juice, and one egg yolk. You simply mix all the ingredients together before pouring into your graham cracker crust, and then bake in the oven for 20 minutes. Allow time to completely cool down before chilling in the fridge for at least one hour before serving.
Recipe for Graham Cracker Crust:
The recipe for this graham cracker crust is super easy to make! You simply pulse 5 graham crackers together in a food processor, and then mix with 1 tbsp sugar and 3 tbsp melted butter. Press the mixture into a pie plate and then either chill in the fridge for two hours to set for a no-bake pie recipe, or bake in the oven for 8 minutes at 350 before baking like in this recipe here.
These measurements are for a 5 inch pie plate. If you're making a full sized pie, simply double the measurements I've provided.

- I used store bought lime juice which made this super easy to make. Don't use the lime juice in the green lime shaped bottle. You want Key Lime juice. I used the brand Nellie and Joe's that you can find on Amazon and at most grocery stores.
Mini Key Lime Pie
Ingredients
- 1/2 cup Sweetened Condensed Milk
- 1/4 cup Key Lime Juice
- 1 Egg Yolk
Instructions
- Preheat the oven to 350º.
- Start off by preparing your graham cracker crust. Either pulse the graham crackers in a food processor, or place them in a gallon bag and smash them with a rolling pin until they are fine crumbs.
- Pour the graham cracker crumbs into a medium size bowl and mix with the sugar and melted butter until the texture resembles course sand.
- Press the mixture into your pie plate along the bottom and up the sides. At this point you can either bake the crust in the oven for 8 minutes.
- In a medium size bowl whisk together the condensed milk, egg yolk, and key lime juice. When the crust has finished baking in the oven, pull it out of the oven, and pour the key lime pie mixture into the crust.
- Bake the pie in the oven for 15-20 minutes, until it's just barely set and the center still jiggles slightly when you wiggle the pie plate.
- Allow the pie to cool to room temperature, and then cover and allow to chill in the fridge for at least one hour before serving.
