A zero calorie sweetener that is naturally derived from Monk fruit. I like that both of these options are natural and aren't overly processed ingredients but are still fairly inexpensive and easily accessible.

Monk fruit is a gourd/melon that grows in Southeast Asia. It is harvested and used as a sweetener because it produces an extract called mogrosides. This extract is 150-200 times sweeter than sucrose and is also zero calories, making it a great option for people who are looking for all natural, zero calorie sweeteners.

To make this mug cake recipe you're simply going to combine all your ingredients together in a medium size mug, and then microwave for 60 seconds. I used a ramekin for these pictures and the cake slightly bubbled over the edge. I would recommend using a deeper mug to prevent this from happening.

- 1/2 tsp Baking Powder
