I am a major fan of chocolate chip cookies. Sometimes though I really don't want to make an entire batch. Often in our house we'll make cookies one night and they'll be delicious, but the leftovers the next day are just never the same. This single serving chocolate chip cookie recipe is an easy way to get your cookie fix, without dumping leftovers in the trash the next morning.
Single Serving Chocolate Chip Cookie:
You make a single serving chocolate chip cookie much the same way you would make any other cookie. Start by creaming your butter and sugars together, then add your egg, followed by vanilla, flour, baking soda, water, and finally chocolate chips. I find mixing between each addition makes for the best consistency. Finally you'll roll the dough into a ball and bake on a cookie sheet in the oven for about 11-13 minutes.

Cooking Tips for Single Serving Chocolate Chip Cookies:
- I used a medium/small bowl to mix my ingredients to keep everything pretty contained and together. A cereal size bowl should work great.
- I found mixing the ingredients together with a fork to be the best practice. This allowed for me to cream the butter and sugars together evenly and worked well for mixing in the flours and other ingredients too.
- I got about 3-4 cookies from this recipe. I used a cookie scoop to portion out my cookies, so depending on how big/small you scoop them will depend on how many cookies you get.
- After you scoop your dough, roll it in a ball between your hands and then place on the cookie sheet.
- I baked my cookies for 12 minutes, and then let them cool on the pan out of the oven for about 2-3 minutes before transferring to wax paper on the counter to cool.
- For the egg, I whisked 1 egg together and then scooped out 1 tablespoon of egg from the dish to add to my cookie batter. You can save the rest of the egg for another recipe or breakfast in the morning.
Single Serving Chocolate Chip Cookie
Ingredients
- 2 tbsp Butter, softened room temperature
- 2 tbsp White Sugar
- 2 tbsp Brown Sugar
- 1 tbsp Egg, whisked* See note
- 1/4 tsp Vanilla
- 6 tbsp Flour
- 1/8 tsp Baking Soda
- 1/4 tsp Hot Water
- 1/4 cup chocolate chips
Instructions
- Preheat your oven to 350º
- In a medium size bowl using a fork, cream together the butter, brown sugar, and white sugar. Once they're well combined add your 1 tablespoon of egg.
- For the egg you're going to break the egg into a separate bowl and whisk it together. Then you'll take a tablespoon scoop from the bowl and add it to your butter and sugar mixture.
- Mix the egg into your sugars until well combined, and then add in the vanilla, and mix again to combine.
- Next you're going to mix together 1/4 tsp of hot tap water with 1/8 tsp of baking soda. Doing this will cause an alkaline reaction with the baking soda and provide better results for your cookies. Once the water and baking soda are combined, add to your batter and mix well.
- Then you're going to add your flour into the batter. It will look like too much flour at first, but it will all come together really well. Don't over mix, and stir until it's all just barely incorporated.
- Finally you'll add in your chocolate chips, stirring until they're well distributed, and then stop.
- Using a cookie scoop, scoop up your dough, roll it between your hands to form a ball, and then place it on your cookie sheet. Repeat until all the dough has been used.
- Bake in the oven for 11-13 minutes. Remove from oven and let cool on the pan for 2-3 minutes to give them some time to settle, and then transfer to some wax paper on the counter to finish cooling.
