This pancake recipe for one is the perfect morning breakfast when you want a warm comforting breakfast without the crowd.
Do you ever find yourself wanting pancakes but don't want to make an entire batch that you'll have to eat every morning for a week straight? Sometimes you just want to eat a couple pancakes, and then be done with the situation. This small batch pancake recipe is perfect for college students, or anyone living on their own.
Pancake Recipe for One:
This pancake recipe is super easy to make. Simply whisk together your dry ingredients and set them aside. Next you're going to mix together the wet ingredients and then add them to your dry ingredients. Heat up your pancake griddle on medium heat, and pour 1/4 cup of batter onto the griddle. Cook until bubbles appear on the surface, and then flip. Cook for another minute, making sure the insides are well set. Serve with your choice of syrup and butter!
Pancake Ingredients:
- 1/2 cup All Purpose Flour
- 1/2 tbsp Granulated Sugar
- 1/2 tsp Baking Powder
- 1/4 tsp Baking Soda
- 1/8 tsp Salt
- 1/3 cup Milk
- 1 Large Egg
- 1/4 tsp Vanilla Extract
How to Cook Pancakes:
For best results, cook your pancakes on medium heat. If your temperature is up too high you'll burn the outside of the pancake before the middle is cooked all the way through. Another great tip is to make sure you're using a nonstick pan. I often do not grease my pan before using because it's nonstick. I often find greasing the pan can cause my pancakes to become crispy on the outside instead of soft. It may be a personal preference, but we prefer to not cook ours in non-stick spray or any type of oil to grease the pan.
Best Electric Griddle for Pancakes:
We've always used an electric griddle for pancakes. I find that they yield much more consistent results than cooking on the stove, and they're one of the few small kitchen appliances I think are an absolute must. We have this Presto 22 inch griddle and I seriously love it. It fits six pancakes at a time so you aren't spending your entire morning flipping pancakes. I've also gotten 8 slices of French Toast on there at a time which is a huge because it means I only have to cook one batch for our family of four.

Ingredients
- 1/2 cup All Purpose Flour
- 1/2 tbsp Granulated Sugar
- 1/2 tsp Baking Powder
- 1/4 tsp Baking Soda
- 1/8 tsp Salt
- 1/3 cup Milk
- 1 Large Egg
- 1/4 tsp Vanilla Extract
Instructions
- Turn your pancake griddle onto medium heat.
- In a bowl whisk together your flour, sugar, baking powder, baking soda, and salt. In a separate bowl, whisk together your milk, egg, and vanilla.
- Mix your wet ingredients into your dry ingredients.
- Using a 1/4 cup measuring cup, scoop your batter and pour it onto your griddle. The batter should be enough to make three pancakes.
- When the pancakes start to bubble on one side, flip, and cook for another minute until they're set all the way through.
